When you’re feeling hungry is there really anything more delicious and heartwarming than a lovely warm toasted sandwich oozing with cheese? Our take on this classically French Croque Monsieur snack ticks all the boxes, and when served with a lovely radish salad makes the perfect low-carb working from home lunch.
Serves: 2
4 slices LivLife bread
100 ml double cream
½ tsp Dijon mustard
a pinch of freshly grated nutmeg
100 g gruyere cheese, grated
2 slices cooked ham
For the salad:
½ tbsp sherry vinegar
½ tsp Dijon mustard
1 ½ tbsp olive oil
1 little gem lettuce, chopped
150 g radishes, sliced
- Preheat the oven to 220°C (200 fan) / gas 7 and line a baking tray with greaseproof paper.
- Toast the bread and transfer to the baking tray.
- Put the cream in a small saucepan and heat until it starts to simmer. Take the pan off the heat and stir in the mustard, nutmeg and half of the cheese until it melts.
- Use a third of the sauce to cover two of the toast slices, then top with the ham and half of the remaining cheese. Lay the other two slices of toast on top, spoon over the rest of the sauce and sprinkle with the rest of the cheese.
- Bake the croques for 10 minutes or until golden and bubbling.
- To make the salad, whisk the vinegar and mustard together with a pinch of salt and pepper, then whisk in the oil. Toss with the lettuce and radishes and divide between two plates. Add the croques and serve immediately.
