Serves 1

Ingredients

2 slices Livlife seriously seeded bread

2 tsp sundried tomato paste

1 tbsp beetroot hummus

1 thin slice red cabbage

1 soft lettuce leaf

¼ yellow pepper, thinly sliced

½ small carrot

1 slice from a large tomato

Method

  1. Spread one slice of our delicious bread with tomato paste and the other with beetroot hummus. 
  2. Top the hummus side with red cabbage, followed by the lettuce and yellow pepper.
  3. Use a vegetable peeler to shave the carrot into thin ribbons and arrange on top, then add the tomato. Close the sandwich with the other slice of bread.
  4. Enjoy straight away or wrap in greaseproof paper and pack for later.
